Glas restaurant, located in Dublin, Ireland, believes in using seasonal vegetables and local produce to create sustainably sourced gourmet food. Glas, meaning 'green' in Irish, has a plant-based menu with many vegan options. Rather than using meat substitutes, Glas prides itself in creating delicious dishes with fresh Irish ingredients that are naturally vegetarian or vegan.

Glas' young Head Chef Malte Half has been plant-based for 8 years, although he has been a chef for two decades. Before working at Glas, he worked exclusively at hotel restaurants, including the Shelbourne, the Four Seasons and Anantara The Marker hotel. He considers Glas as a place that has allowed him to use his creative freedom, the unique taste and texture pairings of vegetable-based dishes being his main focus.

Glas works with local suppliers, adapting the menu weekly to match the seasonality and supply of produce.
