The menu is versatile, multifaceted and in a constant state of innovation and change, influenced by Head Chef Andrea Pasqualucci’s unwavering commitment to using seasonal and local produce provided by small-scale producers in the Lazio region. Moma goes above and beyond in this commitment, by especially embracing less attractive produce and foraged ingredients, appreciating their natural flaws and giving them new life in a beautiful way. 

From making less popular meat and fish cuts the star of the amouse bouche to giving slightly wilted herbs a second life in butter and more, Chef Andrea’s dedication to reducing and eliminating food waste is unmatched.
