Gelateria Tonka was created by young chef Valerio Esposito out of a passion inspired by his father. They turned a historic family run pastry shop into the innovative artisanal gelateria that Tonka is today. Their dedication to quality and excellence leads them to go to lengths as far as toasting their own cacao beans to make their own chocolate and innovatively using lesser known ingredients such as the butterfly pea flower and more. Despite its success, family has always played a pivotal role at Tonka. Valerio Esposito, the founder and head gelato maker is at the helm of the institution, with his father bringing in years of pastry making expertise alongside his mother and wife building the backbone and heart of Tonka and continuing to pass on the passion and values to their children. 

Tonka’s dedication to the planet can be seen in all aspects, from its partnerships, production and even packaging. They place an important focus on ethical production chains, opting to work with companies focused on fair compensation and adequate living conditions for workers, supporting sustainable agrifood systems. Each year, Valerio chooses a theme for his work on sustainability, through gelato and beyond, from focusing on issues from tree planting to pollinators and melting glaciers. He even collaborates with related organizations as well as artists, schools and more, diversifying and strengthening his unwavering dedication to the environment and his craft.
